Pad Thai, I like to call it the King of Thai Street Food. You wouldn't disagree, would you? That's right, shrimp, chicken, rice noodles, and the zesty blend of spicy and sour seasonings are waltzing in the sizzling wok, creating waves of irresistible aroma!

Here's a simple version of the stir-fried noodles recipe for you to enjoy the bold flavors of summer right at home.

Ingredients:

Rice noodles

Shrimp

Chicken

Tamarind Paste

Onions (optional)

Bean sprouts

Eggs

Fish sauce and red sugar for sauce

Instruction:

Tips: The key to making Pad Thai lies in the sauce! We recommend using Tamarind Paste, also known as "Lor Mee Chor" or tamarind sauce. The sauce can be enhanced with fish sauce and the red sugar you have at home. For a more authentic Thai flavor, you can use coconut sugar instead of red sugar.

Tamarind Pastes for Pad Thai sauce

1. Pour rice noodles into a pan, add the sauce, and throw in some shrimp or chicken (any meat you prefer, though chicken complements this flavor well). Let the rice noodles tumble in the sauce.

2. When the meat is almost cooked, add onions, bean sprouts, and eggs to the pan. Add a bit of fish sauce if you like and stir-fry for 1-2 minutes until the ingredients are well-cooked.

3. For a richer texture, squeeze some lime juice before serving and sprinkle crushed peanuts.

Tom Yum Soup / Tom Yum Goong(ต้มยำกุ้ง)

Tom Yum is a Thai sour soup that brings an indescribable delight, especially in the scorching summer. Today, we're making the "creamy version" of Bangkok-style Tom Yum Goong, a simple recipe perfect for you to experience homemade cooking pleasure.

Ingredients:

Medium to large shrimps (tiger prawns preferred)

1 stalk fresh lemongrass (cut into 4 strips)

6 Makrut lime leaves

3 slices galangal

Thai chilies ( amount is to taste)

Fresh oyster mushrooms (cut into pieces)

2 tablespoons Nam Prik Pao (Thai roasted chili paste)

2 teaspoons fish sauce

3 tablespoons lime juice

Half a cup of skim milk or 3-5 tablespoons of coconut milk

Cilantro leaves (for garnish, optional)

Instructions:

Making shrimp stock: (Or you can use canned chicken stock directly)

1. Peel the shell and head off the shrimp, keep the shrimp tails on.

2. Put the shrimp head and shell in a pot, then stir-fry to extract shrimp oil.

3. Boil 3 cups of water in advance, pour the boiled water into the pot. Lightly squeeze the shrimp heads using a silicone spatula to extract the juices from them.

4. Continue boiling for 5-10 minutes (depending on the intensity of your heat). Once the shrimp broth has developed a rich colour, strain out the shrimp heads and shells. Filter the shrimp broth to remove any impurities, skim off the foam, and your shrimp stock is ready.

Creamy Tom Yum Goong:

5. Adjust the heat to medium-high, and add lemongrass, galangal, Thai bird's eye chili, and Nam Prik Pao sauce to the shrimp soup stock. Bring it to a boil for 5 minutes.

6. Add shrimp, oyster mushrooms, and kaffir lime leaves, cook until done, then add lime juice (avoid adding it too early to prevent bitterness).

7. Reduce the heat to low or turn off the heat. Pour in half a cup of skimmed milk or 3-5 tablespoons of coconut milk, and stir well to make the soup richer and creamier.

Note that the taste of the soup may become milder after adding milk, so you can adjust the flavor with fish sauce according to your personal preference. You can also add other seafood according to your preferences.

On the streets of Thailand, you'll occasionally hear the sound of a wooden pestle pounding a mortar; that's the sound of street food vendors preparing green papaya salad. This salad is not only delicious but also low in calories!

Ingredients

2 cups shredded green papaya(1 green papaya)

1-2 cloves garlic

2-3 Thai bird's eye chilies (adjust according to spice preference)

1-2 tablespoons dried shrimp (optional)

5 cherry tomatoes, halved

2 long beans, sliced into 2-inch pieces.

2 tablespoons roasted peanuts, crushed

Sauce:

2 tablespoons fish sauce

1 tablespoon lemon juice

1 tablespoon palm sugar or brown sugar

Instructions:

1. Place garlic, chilies, and dried shrimp in the mortar. Pound to crush them with a pestle.

2. Add shredded green papaya, long beans, cherry tomatoes, and sauce. Stir the salad evenly with a spoon or pestle. Sprinkle with crushed roasted peanuts and enjoy the deliciousness.

Ingredients:

1 tablespoon Thai black tea (Number-One Brand is preferred)

1 cup of hot boiling water

2 teasdpoons sweetened condensed milk

2 teaspoons evaporated milk

2 teaspoons sugar(optional, adjust to your taste)

Crushed ice
