Whether you're a kitchen novice or an experienced home chef, I want to share with you the secrets of creating a healthy and visually appealing summer salad. This blog compiles three recipes for summer salads that strike a perfect balance between proteins and veggies, all aiming to give you a chance to fall in love with salads!

Spicy Thai Beef Salad Recipe---Yum Nua

The arrival of summer is exciting enough, so why not welcome the season with a plate of thrilling, spicy, yet refreshingly cool Thai Beef Salad? Featuring beef as the star ingredient, combined with the tangy goodness of lime juice and an array of aromatic spices, it's a Thai-inspired delight.

Spicy Thai Beef Salad summer flavor

When making salads at home, we have the freedom to tailor them to our preferences and choose ingredients that suit our taste. The ingredients for this recipe are easily accessible, making it a breeze to whip up a delicious meal.

Ingredients

Salad

1 LB Steak Filet

1/2 or 1 cucumber

5-8 cherry tomatoes cut in half

1 medium Red Onion (sliced thinly)

Fresh mint leaves

fresh cilantro leaves and stems

Beef Marinade

4 Garlic Cloves( Peeled )

1/2 Thai red Pepper

2 tablespoons Fish Sauce

2 tablespoons Lime Juice

1 teaspoon Olive oil

Dressing

2-3 tablespoons Fish Sauce

1/4 cup Lime Juice

1 teaspoon Brown Sugar

1 Thai red Chili

2-3 clove garlic(peeled and chopped)

1 Tablespoon olive oil

Instructions

1. Mix all the marinating ingredients, ensuring a thorough blend. Place the beef on a plate, spread it evenly, add the well-mixed marinade, coat it uniformly, and refrigerate for at least 1 hour.(You can marinate the beef the night before for even more flavor.)

2. Prepare the salad dressing: Combine all the ingredients and stir until the sugar dissolves. Add the lime juice at the end for a burst of citrusy freshness.

3. Heat a pan over medium-high heat. Place the marinated steak (discarding excess marinade) on the pan and cook for 3-4 minutes on each side. Once done, transfer the beef to a plate and let it rest for 10 minutes.

4. Slice the cucumber horizontally, and arrange the cucumber slices, cherry tomatoes, onion shavings, and mint leaves on a salad platter. Spread them evenly and add half of the salad dressing, tossing everything thoroughly.

5. Slice the steak against the grain into thin slices, and place them into the salad plate. Top with the cilantro and the rest of the dressing.

Then, enjoy!

Note: The use of fresh mint leaves and chili is key to the success of this salad recipe.

Grilled Chicken Salad with Mango

Grilled Chicken Salad with Mango

Get ready for a burst of summer flavours with our grilled chicken and mango salad recipe!

Ingredients

1-2 ( 500g ) Chicken Thigh

8 cherry tomatoes cut in half

1 red capsicum ( optional, thinly sliced)

2 firm ripe mangoes

1-2 tablespoons of fresh lime juice (for dressing)

2 tsp ground coriander ( optional )

1 tsp turmeric

2 teaspoons salt (for dressing)

2-3 teaspoons olive oil

Roasted peanuts ( roughly chopped )

Instruction

1. Debone the chicken thighs, leaving only the meat. Lay the chicken thighs flat, and sprinkle a pinch of salt, turmeric, and olive oil. Evenly coat the chicken thighs, flip them, and continue massaging to enhance the flavor. Place the thighs on a plate and let them marinate for about 15 minutes (or longer if desired).

2. Preheat a frying pan, place the marinated chicken thighs on it, and cook over medium-high heat for about 3 minutes on each side until the chicken is fully cooked. Allow it to cool slightly before slicing or cutting into cubes.

3. Take 8 cherry tomatoes, and cut them in half. Peel and pit two ripe, medium-sized mangoes, then cut the flesh into cubes.

4. Prepare some roasted peanuts, optionally adding a pinch of salt for flavor, then crush the peanuts.

5. Salad dressing: Mix fish sauce, red chili, cilantro (if desired), olive oil, and lime juice. Stir until well combined.

6. Choose a visually appealing salad plate and arrange the sliced chicken, cherry tomatoes, mango chunks, and crushed peanuts. Then, drizzle the well-mixed salad dressing over the top. Your salad is now ready to be served!

Grilled Prawn and Avocado Salad Recipe

Grilled Prawn and Avocado Salad Recipe

It's the season for grilled prawns calling your name, a combination of prawns, avocado, and cucumber that epitomizes refreshing summer cuisine.

Ingredients

2 baby cos lettuce, cut into wedges

16 prawns (deveined large shelled tails intact)

1 Lebanese cucumber( sliced )

2 teaspoons extra virgin olive oil

2 teaspoons black pepper crushed

Fresh Lime Juice

2 teaspoon salt

1 large ripe avocado ( sliced thinly)

Instruction

1. If you have purchased fresh prawns, clean them thoroughly and pat them dry. Remove the shells, leaving the tail intact. (If using frozen prawns, thaw, wash, and pat dry.) Place the prawns in a bowl, add black pepper, salt, and a little oil. Mix them evenly to coat.

2. Preheat a frying pan, add olive oil, and cook the prawns over medium to low heat until they are thoroughly cooked.

3. Prepare 2 baby cos lettuce, cut into wedges. Take 1 cucumber and 1 large ripe avocado, and slice them thinly.

4. Combine the olive oil, salt, black pepper crushed, and lime juice using a shaker.

5. Line a cute salad bowl or a colourful bamboo fiber salad plate with lettuce leaves, and add the prawns, avocado, and cucumber. Then, pour in the salad dressing and mix evenly.

Note: When stirring the avocado, be gentle to avoid mashing the avocado slices.
